So I've seen a lot of pins marked with the grail "crown" in the Collection sections of Pinipcs (as opposed to "Wants"). Why is this? Are people just marking their most-loved pins?

You can mark pins in your wants as grails to signify that you consider them your grails! I actually had someone offer me to trade one of my grails because I had it marked like that (it didn’t go through though)

You can also mark pins in your collection as grails to show that you love them the most/ consider them grails. Other than that, it doesn’t really have a function on PinPics

Took me awhile to figure out how to mark grails...
So... FYI: To see the 'grail' check box in Pinpics you will have to locate the pin in your specific 'collection', 'wants' or 'trade' list. If you look at the pin in the 'Gallery' or you bring the pin up by search (key words or number), I do not believe you will locate the 'grail' check box. Also the 'grail' check box only appears when hovering over the small picture of the pin in my specific list with my mouse (the check box is right under "LE : xxxx" and sometimes the check box gets a bit lost in the edge of a pin picture). I do not believe you are able to mark the pin as 'grail' any other way, but if someone else knows different would love to learn.

I like to use the 'Grail' function in my PinPics collection to keep track of the pins I once considered grails. They're not necessarily my most-loved pins, but the ones that took the longest to find or meant the most when I finally tracked them down/received them as gifts.

Personally I have "Grail" stamped on my favorite pins in my Collection and my most wanted in my Wants

When you have a pin marked as a grail in your wants, does the pin stay as a grail when you move it to your collection?

I think so but you can easily try it yourself! Just check collection on one of the grail wants and see. Since it’s its own checkbox, it should stay checked until you uncheck it.

I typically mark them as grails only if they are in my collection. I have always felt that I lose bargaining power in trade negotiations if the other person knows that the pin I'm trading for is one of my grails.
