Nah not really. As long as you know the basics about Lightning McQueen and also about Doc Hudson. (A quick wiki search will do that for you)

I'm sure I saw scenes here and there but just like The Godfather, which I also never made it through, I have yet to sit down and watch it from start to finish.

I'll throw my confessions in here as well: I don't particularly like Inside Out (watched it three times, still couldn't get into it) and think Tangled is reallllly overhyped.

For those who haven't seen Cars 3, please give it a chance! It's not the most exciting Pixar film, to be sure, but Cruz Ramirez is such an incredible character and one of the most sympathetic and strong forces in that whole series.
