There is far too much chatter about Disneyland Ds and Castles, so let's skip those for this question.

My favorites are pretty old.

DLR - The 2 sets of Alice in Wonderland Pocketwatches (Cast Lanyard Series IV and Hidden Mickey 2007). Although my 2007 pins are all fakes/ 🙁

WDW - The USA set from the very first Cast Lanyard Series, and the Epcot Parking Lot Signs

Hmmm, excellent question. Going with my all time favorite hidden Disney pins: the carnival masks (both sets - villains and sensational six).

Color story for me!
I love the refined simplicity of them, & all the different ways they can be displayed (a single pop of pure bright color on a character board, grouping characters who are otherwise wouldn't be associated by color alone, or picking a specific set of colors for a theme).

I also have a soft spot for the cupcake pins (I like food-themed pins in general); though I don't think all of them hit the balance between 'character themed' & 'still recognizable as a cupcake'.

I think the fear of scrappers kind of turned me away from the hidden mickeys for a long time, but looking at some of the genuine ones and how pretty they are makes me wish I'd completed some sets. The Haunted Mansion, and the Disney Dog Bones are faves.

The pocket watches were my immediate first thought as those were on the lanyards when I first started park trading.

But these were real winners too:

Along with my beloved teacups:

LI'L PUDGE! One of my all-time pin loves!

I also really like the concept and design of the Robin Hood coin series from years ago, even with them being horribly scrapped.

Oh, both of those are so good! Now I'm really excited to see what the next wave of Hidden Disney pins will be; I hope they bring back some of these ideas.

Ah yes, I really like those tea cups too.

I tried to collect the tea cups but was never really ever able to get a set so I finally gave up and then they were scrapped.
I think I still have one.

As an anthropologist, I really loved the Maui Tattoo series: 2018 Hidden Mickey - Maui Tattoo Disney Trading Pin Series | Pin & Pop
And the World Snapshot series: 2009 Hidden Mickey - World Snapshots Disney Trading Pin Series | Pin & Pop
But my favorite series is the Peter Pan Chess Set:

This is a tough one for me as I'm a major HM collector and I love pretty much all of them. It would be easier for me to say which one I don't like (*cough*NBC Candy Corn*cough*). Of the ones mentioned so far, I really like the Peter Pan and AiW sets and the Parking signs. And the unbirthday set is so fun (and crazy hard to get!).

When I think of my true favorites, three stand out:

1. This C+D treats set because A) they're so friggin cute, B) it was one of the first sets I remember working on and C) The cotton candy one in particular was very hard to get and was my first "accomplished grail"

2. This Mickey in the Parks set because the Director was extremely elusive and I only recently acquired it. I was starting to think it didn't actually exist so a super grail I guess.

3. This alphabet set because I am just a major sucker for alphabet series and I like the cutouts more than the 2009 set.

@Sithathoriunet - I have the full Alice in Wonderland chess set because I wanted to frame it as a full chess set but never got enough Alice pawns to do so - and omg I didn't realize they also did a peter pan chess set with Tiger Lily as the Queen!!!! It's PERFECT!
